Zucchini Salmon Roll with Cashew Dill Cream
These make great healthy appetizers that are easy to make and are a great to make ahead. You can cook the Zucchinis and make the sauce the day before on the day of the party just roll them and serve.
Ingredients:
3 Zucchini sliced in long 1/4 inch strips
8 oz of Nova smoked salmon
Sauce ingredients
6 sprigs of Dill
1 cup of raw cashews (soaked)
3/4 cups of water or broth
1 garlic clove
3 sprigs of dill, (remove thicker stems)
1/2 teaspoon of salt
pinch of sugar like a 1/2 teaspoon
Preheat the oven to 400 F
Slice the Zucchini in half long wise in about 1/4 inch just like picture. Place in a sheet pan lined with parchment paper and and season with salt and pepper and drizzle with olive oil.
Bake for about 15-20 min until golden brown
For the sauce:
Place cashews in a bowl, cover with water or veggie broth and soak at least 2 hours to overnight (keep refrigerated).
In a bowl of a small food processor or blender add the cashews with the water or broth, garlic, dill and salt. Blend until very smooth and set aside.
To assemble:
Place the Zucchini flat and lightly spread the cashew dill sauce add the salmon a sprig of dill and roll away. Secure with tooth pic and serve!
