Santorini Shrimp

This easy shrimp dish will soon become one of your favorites, the combination of flavors of our green, red and yellow mojos with the feta cheese is just divine.

Serves 4

Ingredients:

1 lb of raw shrimp

1 large onion cut small diced

2 tablespoons of Red Mojo

2 tablespoons of Green Mojo

2 tablespoons of Yellow Mojo (To marinate the shrimp)

1 cup of cherry tomatoes diced in half

1/2 cup cup of feta cheese

Flat leaf parsley to garnish

Preparation:

In a saute pan:

Add about 3 tablespoons of Olive Oil to the pan and add the onions and a pinch of salt and cook for about 2 -3 mins. Add the Green and Red Mojo and cook for about 3 more minutes.

In a separate bowl mix the shrimp with 2 tablespoons of Yellow Mojo and mix well. Add the Shrimp to the pan and saute for about 2 min per side. Add the tomatoes add a pinch of salt and black pepper, cook for about 5 min.

Add Feta Cheese and garnish with parsley then drizzle with Olive Oil, enjoy with a good baguette and a fruity white wine.
