Orange Blossom Almond Flan

Serves 8

Ingredients:

For the caramel:

1/2 cup of granulated sugar and 2 tablespoons of water

For the Flan

1 can of condensed milk

1/4 cup of almond flour

Zest and juice of 1 orange

1 teaspoon of orange blossom

5 whole eggs

4 egg yolks

Pinch of salt (every yin needs its yan)

Preparation:

To make the caramel

In a small sauce pan over medium heat add the sugar and water, tilt and swirl the pan gently so the sugar is wet.

Cook for about 8 min or until the caramel turns medium golden brown and smells like caramel

Pour caramel into the mold immediately, allow the caramel to set in the mold for about 5 min

For the flan:

Add the eggs, the yolks, the condensed milk, almond flour, orange juice and zest and pinch of salt mix in the blender.

Pour over the caramel and place it in a roasting tray filled with 1 finger depth of cold water creating a bain marie for the flan to cook gently.

Bake for 40 min or until set.

Allow it to cool completely in the fridge. You can make this the day before so it is nice and chilled.

When ready to serve, run a paring knife around the inside of the mold. Make sure it comes loose from the mold before flipping it over into a plate. I hope you love this recipe and we wish you a Happy Valentines’ Day.
