Clams in Albariño wine and Serrano Ham

Albariño wine (“alba-reen-yo”) is a delightfully refreshing coastal white that grows on the Iberian Peninsula. It’s loved for its rich stone fruit flavors, a hint of salinity, and zippy acidity and it pairs beautifully with the clams and the salty serrano ham

Ingredients:

1 lb of little neck clams

3 cups of Albarino wine

1/4 cup of chopped parlsey

1 lemon

1/4 cup of chopped serrano Ham

2 garlic cloves mashed

2 tablespoons of butter or Extra Virgin Olive oil

In a saute pan, add the butter or olive oil and heat at medium low for about 3 min, add the wine and simmer or a minute, add the parsley and then the clams. Let it cook until they open and finish with the serrano ham. Cover for a min with foil so the aroma of the ham infuses every thing. Serve with a good baguette.
