Spinach Balls in Sofrito Sauce

Ingredients: Serves 6-8

2 bags of frozen organic spinach (Thawed, and strained)

½ cup of grated parmesan cheese or ½ cup of nutritional yeast

2 eggs

½ cup of ricotta cheese

2 tablespoons of White Mojo or 2 garlic cloves mashed

1 teaspoon of garlic powder

1 teaspoon of black pepper

Pinch of nutmeg

½ teaspoon of sea salt

1 tablespoon of pea protein powder

Sofrito Sauce

4 tomatoes grated on a tomato grater or 1 cup of your favorite tomato sauce

1 red bell pepper cut into small diced

1 yellow onion small diced

5 garlic cloves minced

2 teaspoons of spanish smoked paprika

Preparation

In a bowl add the 3 egg whites, ricotta cheese, white mojo, garlic powder, salt, pepper and protein powder, cheese or nutritional yeast. Add the spinach and mix well

Roll into balls and drop in boiling water for 3-4 min.

Sofrito Sauce:

In a large skillet add 1/4 cup of Extra Virgin Olive oil and add onion and red bell peppers a pinch of salt and a pinch of sugar cook on medium low for 10 min. Add the garlic and cook for 2 min, add the tomatoes add another pinch of salt and paprika and cook cook for 10 more min.

Serve with zucchini noodles or pasta of your choice.
