Smoked Moroccan Eggplant

Smoked Eggplant

Serves 4


3 Chinese Eggplants or 1 large globe eggplant

1/4-1/2 cup of Extra Virgin Olive Oil

4 Tablespoons of Driana Foods RED MOJO

Salt and freshly ground pepper to taste

Garnish fresh mint

Drizzle of honey (optional but delicious)


Cut the eggplant in 1/4 inch cubes and saute them in a pan with 1/4 cup of olive oil. It seems like a lot of oil but it will be absorbed by the eggplant they are like sponges.

Saute them for about 10-15 min until they are soft and almost creamy. Turn heat to low and add the RED MOJO cook for a minute

Serve drizzle with honey and garnish with mint.
