Mushroom Umami Vinaigrette


A mushroom vinaigrette may sound crazy but you will be pleasantly surprised! The Black Mojo with a nice thick Balsamic Vinegar will make this Vinaigrette very interesting. Since Tomatoes have its own umami we suggest you drizzle this over farm fresh heirloom tomatoes now that they are in season with some Feta cheese!

Yields 2 cups


3 tablespoons of Black MOJO

1 1/2 cups of Extra Virgin Olive oil

1/2 cup of a good Balsamic Vinegar

Chopped Parsley (1 tablespoon finely chopped)

1 teaspoon of honey(optional)


In a bowl mix the Black Mojo with vinegar and mix it well, add the parsley and honey.

In a blender add this mixture then add the the oil slowly through the top of the blender until smooth.
