Mojo Guacamole


Yields 2 cups


3 ripe Hass avocados

3 tablespoons of Green Mojo

Juice of 1 lime

1 tablespoon of apple cider vinegar

1/4 teaspoon of  sea salt

1 plum tomato chopped small diced

1 small shallot or 2  green onions chopped small

1-2 garlic cloves minced


 Chop the onions/shallots and mince the garlic,  add the vinegar so it can pickle it for about 30 to an 1  hr.  This is optional but it makes the  onion and garlic a bit  less pungent. After 1 hour discard the vinegar and reserve the pickled onions and garlic.

 In a bowl mash the avocadoes add the tomatoes, lime, Green Mojo, salt onions, and garlic taste adjust seasoning if needed.

For a smoother guacamole add all ingredients in a food processor.

Serve with Plantain Chips!
