Gypsy Stew

Olla Gitana


1lb of Butternut Squash cut in cubes

2 cans of Garbanzo beans

2 cup of coconut milk

3-4 cups of Water

2 plantains cut into 1/4 inch thick

3 tablespoons of White MOJO

2 tablespoons of Green MOJO

1 cup of Chopped Bok Choy

1 cup of Lacinato Kale sliced thin

1 teaspoon of Turmeric

1 teaspoon of pink peppercorns(optional)


In a soup pot add the MOJOS and the butternut squash and saute slightly with a tablespoon of EVOO (Extra Virgin Olive Oil)

Add the Garbanzos, the plantain add the water and cook for about 10 min

Add the coconut milk, the turmeric, the peppercorns and cook for another 10 min at medium heat

Finish with Bok Choy, Kale.
