Catalan Style Sauteed Spinach


This Catalan style recipe with the combination of savory and sweet is great and refreshing I promise you will be pleasantly surprised just make sure to quickly saute the greens so you don’t over cook them.

Yield:  4 servings                 


1lb of Spinach

10 oz of Arugula

3 Tablespoons of White MOJO or 6 garlic cloves sliced

2-3 tablespoons of sherry Vinegar, or apple cider vinegar

2 Tbs.           Extra virgin olive oil

1/2 cup           Pine nuts

1/2 cup           Marcona almonds or slivered almonds

1/2 cup           Seedless golden raisins (sultanas)

Pinch of Salt and Pepper to taste



In a skillet at medium high heat add pine nuts and almonds and cook until fragant and slightly brown, about 1-2 minutes (be sure to keep them moving so they don’t burn) set aside.

Add raisins & pinch of salt.

Add the spinach and arugula and to the mix and sauté until it starts to wilt about 5 min

Add the White Mojo and stir as the spinach will continue to wilt at low heat about 3 min. 

Add the vinegar cook for a minute

Add salt to taste

Top with pine nuts, golden raisins and almonds

 & serve immediately or pack for a picnic.
