Marinating with Mojos 101
This month is all about Marinating with our mojos, which is perfect for the summer grilling season!
Here is a few rules to follow so you understand the Marinade concept and how they work.
Marinades can be any flavorful liquid, but the traditional standard is a combination of an acid, oil, and flavor elements. Here is a basic marinade formula you can follow:
Examples: Vinegar, orange juice, wine
The Acid tenderizes and adds flavor. Tenderizes proteins and helps boost flavor of other elements in marinade
Examples: Olive oil, sesame oil, coconut oil or ghee
Why: Coats the food and keeps it from drying out; also helps carry flavor
Our favorite oil to use is a good Robust Extra Virgin Olive Oil and If you are an Olive Oil lover you have to try our superb Cornicabra EVOO from Toledo Spain, bottled at the farm within 6 hours of harvest
Examples: Mojos=flavor, Garlic, parsley, ginger, sugar, spices like smoked paprika, cumin, dry herbs like oregano, marjoram, rosemary and thyme
This is where the magic happens and where the flavor is!
If you follow this basic formula, you don't need a recipe for marinating meats or vegetables – just use whatever you already have in your house that falls into these categories of oil, acid and seasonings. If you are just getting started with making your own marinades though, you might want to create them using region-specific ingredients. Here are some marinade combinations to get you inspired.
Here are some quick marinades flavor profiles you can whip up with for chicken, meat and vegetables.
Cuban Marinades/Latin American; White or Green Mojo, Avocado Oil, lime juice, Sweet peppers or ajis, cumin, oregano
Asian Marinades: Black MOJO Rice-wine vinegar, mirin, soy sauce, sesame oil, lime juice, sugar.
Italian Marinades: Red Mojo, Red wine, balsamic vinegar, olive oil, garlic, basil, tarragon, oregano, lemon juice, thyme, rosemary
Indian Marinades: Yellow Mojo, Yogurt, ginger, curry, cilantro, mint, garlic, turmeric, cumin
