Spicy Peruvian Vinaigrette

If you like a little zing to your salads you got to try this one, it is a delicious palate warming dressing you will love! Pair this vinaigrette with a spinach salad topped with Shrimp or smoked Salmon sprinkled with some cooked Quinoa

Yields about 2 cups

Ingredients:

1 cup of Avocado Oil

1/2 cup of Extra Virgin Olive Oil

4 Tablespoons of Yellow Mojo

Juice of 1 Lime

1/4 cup of Apple Cider Vinegar

1 teaspoon of salt

Pinch of black pepper

1 teaspoon of salt

Preparation:

In a bowl mix the mojo with the lime and apple cider vinegar. Whisk the oil in slowly or mix in a blender adding the oil slowly.
