Peruvian Coconut Shrimp

You will absolutely love this recipe for a weeknight meal, it only takes 15 min or less to make and it is delicious! Our yellow Mojo add a palate warming heat that paired with the coconut milk it is just the perfect comfort food.

Yield: 4 servings

Ingredients:

4 tablespoons of Yellow Mojo

1 can of coconut Milk

1lb of Shrimp

5-6 green onions or (scallions) chopped

1 teaspoon of Turmeric

Juice of 1/2 a lime

Salt to Taste

Cilantro to Garnish

Preparation:

In a skillet heat 1-2 tablespoons of Olive Oil

Add the green onions cook for 5 min

Add the Shrimp and saute for about 5 min

Add the Yellow Mojo and cook for about 3 min

Pour the can of coconut milk

Simmer for about 5 min

Serve over rice or Quinoa and garnish with Cilantro
