Herbed Manchego Cheese preserved in Olive Oil
In mediterranean countries different cheeses are preserved in olive oil and seasoned with herbs, in Spain the most common cheese is Manchego a sheep cheese that when preserved in olive oil the texture gets creamy preserving its sharp and distint flavor.
Ingredients:
80-10 oz of Aged (at least 6 months) Manchego Cheese cut in cubes
Glass resealable container
1 sprig of Rosemary
2 -3 sprigs of thyme
Extra Virgin Olive Oil you will need about 7-8 oz depending how big your container is
Cut cheese in 1/4 inch cubes fill up the jar, add herbs ad fill with Extra Virgin Olive Oil.
Preparation:
Keep refrigerated for up to 3 months
Bring to room temperature about 30 min before serving. Enjoy with crackers or a good rustic bread rubbed with fresh tomatoes.
