Gambas al Ajillo
This dish is a staple tapa you will find in Spain everywhere, it represents spanish cuisine so well, because it is one of those simple dishes that if executed well can take you to heaven in one bite. Adding our White Mojo, it creates almost a creamy sauce that it is just delicious!
1 lb of Shrimp
4 garlic cloves Sliced thinly
4 Thai Chilies
2 tablespoons of White Mojo
1/4 cup of Extra Virgin Olive Oil
Parsley for Garnish and a Splash of Sherry Vinegar for a final touch of acidity
In a saute pan add olive oil and White mojo mix well, add thai chilies and garlic, saute at low heat for 5 min, remove garlic set aside, add the splash of vinegar to the hot garlic, it will taste like candy with the acidity of the vinegar
Season Shrimp with salt and pepper and saute in pan for 2-3 min
Add the garlic back in and add parsley and cook for another minute. Serve with a good baguette
Enjoy as a tapa or a main dish!
